Jumbo Pumpkin Spice Pancakes Recipe! (Gluten and Dairy Free, Vegan Option)

In honor of the holiday season for #tastytuesday we have another pumpkin inspired recipe! The following recipe is made to be allergen friendly as well as have the option to be a healthier play on pancakes, using more natural, less processed ingredients, lower in added sugars and still containing some healthy and tasty ingredients! I had a great time making this recipe my own and I would love to hear if you vary it up what your results are!Ingredients (Makes 4 jumbo pancakes or approximately 16 small pancakes):1 box of Pamela’s non dairy, gluten free, vegan sprouted grain pancake mix1 can organic pumpkin pureeEquivalent of 3 large eggs with egg whites or egg replacer (if you prefer a vegan option)1 cup of milk substitute (I used Good Karma Flax milk)1.5 cup water2 TBSP olive oilOlive or canola oil cooking spray for pan/griddle to prevent stickingPentzeys pumpkin pie spice mix to taste (China cinnamon, allspice, nutmeg, ginger, mace and cloves.)2 tsp. Cinammon sugar (if desired)Utilize add ons or toppings of your choice (recommendations: pre cooking: dark chocolate pumpkin seed bark thins; toppings: Almond butter, raisins, almonds, or any other toppings strike your fancy!):Recipe:

  1. Mix Together full box of pancake mix, pumpkin puree, egg/egg replacer, milk substitute and water, olive oil and spices (dark chocolate pumpkin seed bark thins broken in to small pieces as well if you wish!) in large mixing bowl until batter is adequately mixed, allow to sit for approximately 2 minutes- batter should be a fairly thick consistency.
  2. Spray griddle or large pans with a thin coating of cooking spray to prevent sticking and turn to medium heat Fill large pan with batter or separate into multiple pancakes on griddle.
  3. When batter is consistently forming bubbles and appears to have a fairly cooked base flip over
  4. Allow to cook after flipping for approximately 3-4 minutes
  5. Put on plate, add toppings, and serve!
