Turkey and Veggies Rice Bowl
Hope you are all having a great start to your week! We have a delicious and fairly easy recipe for #tastytuesday this week:Ground Turkey and veggies rice bowl!Ingredients:Olive oil 1 TBS.1 lb. Ground Turkey (semi lean)Mini sweet peppers-101 can artichoke heartsSpinach- 1 large bagJasmine Rice (1.5 cups uncooked)Garlic powder- 2 tspChili powder 1/2 tspRed pepper flakes approx 1 tspBlack pepper approx 2 tsp.Oregano- approx. 1 tsp.Thyme- a small pinch(Spices vary to taste)Makes approximately 4-5 servingsRecipe:1. put uncooked rice in rice cooker with 3 cups of water and turn on/leave to cook2. Cut mini sweet peppers into small strips3. Open and drain the can of artichoke hearts4. Place skillet on stove and turn to medium heat.5. Place olive oil in pan to help prevent sticking and add a little flavor.6. Place 1 lb of ground turkey in the pan and separate so it doesn't cook into one big patty.7.Add in can of artichoke hearts and sliced peppers.8. Add spices listed above or to taste9. Continue "flipping"/mixing your turkey and veggies mix until turkey is no longer pink.10. Once rice and turkey/veggies mix are done cooking, serve over spinach or a leafy green of your choice!This recipe is developed for approximately 4-5 well balanced and portioned meals filled with veggies, protein, healthy carbohydrates and healthy fats!
