Egg Whites and Veggie Scramble
This week a Taste of Health has another fun, healthy, and this time quick recipe for you!Whether you have an active or more sedentary lifestyle, starting your day off with a good breakfast is crucial to ensuring you reach your maximum potential throughout the day. It is important to ensure that you have a balanced breakfast with carbohydrates to get your brain going and of course protein and healthy fats to allow your breakfast to sustain you for longer as well as provide the nutrients necessary for optimal body function. If you can add non starchy vegetables too, that's even better!The recipe below is an egg white veggie scramble with a brown rice tortilla wrap with almond butter.(can substitute a full egg to provide that great protein along with a wide range of micronutrients)Ingredients:1 Brown rice tortillaequivalent of 2 egg whites or 1 full egg1 tsp olive oil (for cooking only)fresh Spinachmini bell peppersHatch chiliRecipe-1. Chop mini bell peppers (2-3 at least)2. put pan on medium heat and use olive oil to prevent sticking; put eggs or egg whites into pan and begin cooking, once eggs begin to cook/become a more solid form, place your bell peppers and spinach in the pan with the egg/egg whites and allow to heat up.3. "scramble" eggs and veggies with spatula or fork4. once cooked to taste add hatch chili salsa for a little spice.5. As the eggs are cooking, take a brown rice tortilla (sold at trader joes) and microwave for 30 seconds to soften.6. Add 1 TBSP of almond butter and spread evenly, fold the tortilla in half and serve.The whole process should not take more than approximately 15 minutes and you have a tasty, balanced breakfast to start off your day!Wishing you a week filled with health and wellness!
